Anatomy of a Memorial Day Weekend

10am drive to Southampton

hit the beach
bake some clams

so easy to do this.  i used 4 cherrystone clams

1 egg

3 slices medium cooked bacon (sliced up)

1/2 cup - 1 cup bread crumbs

2 cloves garlic

1 shallot

salt, pepper and old bay seasoning

bake the clams at 350 F degrees for 20 minutes or till the open.  i think it’s impossible to shuck these critters so bake ‘em to open ‘em up.

once they cool, take the clams out and halve the shells.  chop up the clams and throw in bowl.  add bread crumbs, bacon, old bay seasoning, salt, pepper and egg.  mix the ingredients with a fork.  you can add more bread crumbs if you want a thicker clam mixture.

spoon the mixture into the halved shells.  fill as many as you can.

bake clams at 350 F degrees for about 12-15 min.

when they are ready to serve, i like to place them under the broiler for 90 seconds - 2 minutes to brown the tops.

enjoy with fresh squeezed lemon and a nice cold lager.

and make a fresh homemade lobster roll.  very simple to do this:

1 lb fresh lobster meat
1 tablespoon mustard (i used dijon with mustard seeds)
3+ tablespoons mayo (use according to taste)
salt and pepper to taste
1/2 tablespoon celery leaf - i don’t like celery in my lobster rolls but celery leaf is clearer and more subdued flavor minus the crunch unnecessary texture
chop up lobster meat.  throw in bowl.  add mustard and mayo.  mix with fork.  add salt, pepper and celery leaf.  mix some more.  taste.
In Maine, there’s two separate schools of “lobster rolls”.  one calls for mayo in the lobster meat.  the other calls for butter.  i decided to enjoy both schools.  so after i toasted my bread, i added a generous smear of butter to each loaf before filling the bread with lobster.  it was incredibly good.  and easy!
