saturday, april 11th, this little pastrami experiment of mine will come full circle from butcher to brine to smoker to me belly!!!  i’m excited.  can’t you tell?  and my belly is aching for some good ol’ fashioned lower east side smoked meat.

i was able to secure a fatty 5 pound cut of brisket from citarella.

once the brisket was secured, i followed the recipe from my earlier post and boiled the salt and sugar water then added the spices to steep.  check out the spices.  aren’t they pretty?  they smelled SO GOOD.

i was ready to pour the marinade onto the expectant brisket.  the stars were lined up.  twas a night for romance.

and 3 weeks from this past saturday, after i smoke this fucker, the pastrami experiment will come to a tee.

will this so called pastrami taste good?  will this be a colossal disaster akin to the Titanic?  will i stand at the helm and proclaim myself king?  only time will tell.

3 weeks!!!! this frankenstein’s monster will be eaten.
